During our exploration of the Northern Fjords, we made a stop in Norway where we had the opportunity to taste some delicious Norwegian Pancakes, known locally as Pannekaken.
Pannekaken is similar to French crepes. With easy-to-find ingredients and a simple cooking method, you can make these ultimate pancakes for breakfast or brunch. Just one pancake can easily fill you up for breakfast. These pancakes are seriously easy to whisk together with the usual ingredients and eggs. These thin pancakes make a complete and satisfying breakfast when served with any sort of spreads and fruits. We had these pancakes for our weekend brunch. Once filled with jam or Nutella, you can easily carry them in your snack or lunch box to enjoy as snacks or dessert after a meal. These are perfect crepes to try for kids, as they are kid-friendly and easy to prepare, especially when you are looking to please your kids at home.
Pannekaken (Norwegian Pancakes)

- 3 eggs
- 1 cup flour
- 1½ cups milk
- ⅛ tsp salt
Instructions
- Mix the ingredients together, whisking them until a thin batter forms.
- Spoon the batter onto a lightly-buttered skillet or griddle at medium heat and use the spoon to spread it into a thin circle. {I use a ⅓ cup measure for each pancake and cook them in a 6-inch pan.}
- Cook the pancakes until they are lightly golden on both sides. They cook quickly so keep a close watch.
- Serve the pancakes with powdered sugar, syrup, berries and jam.
- The recipe can be cut in thirds and still makes about 10 pancakes, depending on their size.
